The blocking chambers for rack trolleys are intended for both artisanal and industrial set-ups for the preservation, blocking and slow proofing (+2°C/+10°C) of dough.
Accommodating 460×610 mm rack trolleys, they have been designed to meet the specific requirements of doughs and to prevent drying out.
